Pumpkin Linguini



Ingredients
1 box whole wheat linguini
2 tbsp olive oil
1 cup mushrooms
2-3 heaping cups of kale, large stems removed
1 can pumpkin puree (not pumpkin pie filling)
1/2 cup milk (I used almond milk!)
1/2 cup shredded parmesan cheese
1/2 cup shredded sharp cheddar cheese
1 tsp black pepper
1 tsp thyme 


Directions
Cook pasta according to directions. In the meantime, add your 2 tbsp of olive oil to a large skillet over medium heat. Add the mushrooms and let cook for 2-3 minutes. Then and kale, thyme, and pepper. Stir mixture and let the kale crisp for about 3 minutes.

Next, add the can of pumpkin puree, 1/2 cup milk, and cheese to the skillet. Stir to combine until the mixture is warm and your cheese has melted.

Strain the pasta and combine with pumpkin sauce mixture. Mix together. Serve and add a bit more black pepper on top if desired!

  5. I made pumpkin pasta this week, too! I was surprised at how good it was! Mushroom would have been delicious.. going to add that next time :)
