5 on Friday: Bunny Pups and Resurrection Power

Okay, so you might've already seen this on Instagram. But I completely feel the need to forever document it on the blog too.

The harder she glared, the harder I laughed. She is the best pup ever.
We snagged this costume on clearance post-Halloween at Petsmart. A great $3.44 spent, I'd say.

TWO | HOUSE PROGRESS
My favorite part of each day is heading over to our house to see what progress has been made. Truth be told, I really do this multiple times a day...but it's always the most fun at the end of the day when Mark, Amelia, and I can go over together. You can see all of the updates I'm documenting on Instagram!

Otherwise...I'll fill y'all in on a post I've got up my sleeve for next week. Since paint has been on my mind exponentially more than usual, I cranked out this post out. It's humorous (and exciting) to me that I have so much to say about paint!

My mommy and brother are here! This will be my first Easter away from Charlotte since I can remember...so I'm glad to have a little piece of home with me before Easter Sunday!

Get to know a little bit more about stella & dot and Lauren below!

I became a stylist on a whim....think like I had never been to a Trunk Show, never hosted, never shopped and didn't own one piece of jewelry from Stella & Dot! 

One night I was playing online and happened to stumble across the company and immediately fell in love. I had recently had my first baby and just needed something to call my own. I wanted something new, fun and exciting and this seemed like it. 

I waited a few weeks, talked to the hubby and then eventually decided to become a stylist. Aside from having a ton of cute jewelry, I found that it gave me the opportunity to get out and connect with other women. I chose to start out doing it for fun and to let it be something that "I would start and see how it went." 

Now? Its become so much more than that. Yes, I have fabulous jewelry and accessories and yes, I earn commission, but the group of women that I have connected with, traveled with and am a part of, have become some of my best friends! I still do it just for fun and for me its a no pressure deal, but it has turned into something that I use to help pay for my Starbucks habit, splurges on vacations, pesky bills or even just the occasional Target trip! 

I am now a Senior Stylist and am so thankful for the opportunity I have had with this company! I coach a team of women and have been doing this since fall of 2012. 3 Ingredient [Coconut] Peanut Butter Cookies

 
 
I heard about these cookies. But I didn't fully believe that they would be yummy with only 3 ingredients until I tried them for myself. Verdict? They are, indeed, quite delectable.

When Mark and I discovered that there was literally NOTHING sweet in our house last weekend, I whipped these up for the first time. And I call them [coconut] peanut butter cookies because of my love affair/obsession with...


I like coconut two ways: like this and on Samoas (or "Caramel deLites" as the Girl Scouts now call them). I don't like coconut water, coconut cake, raw coconut, coconut in an Almond Joy, coconut rum...you get the idea. NADA! But I LOVE this stuff. Weird, I know. So this is my "secret" ingredient that puts a tasty spin on the cookies without adding another ingredient.

Side note: the above goodness is also non-GMO verified...if you're into that as I currently am [trying to be]. :)

On to the recipe...!

Ingredients
1 cup [coconut] peanut butter -- crunchy, creamy, it doesn't matter!
1 cup sugar
1 egg
*Okay, I confess. I cheated. I'm sorry. I read the reviews from allrecipes.com and wound up adding a [little more than a] dash of baking soda and vanilla extract to the mixture. They're probably still just as good without those? I just haven't tried the original recipe yet. AHH! I broke the 3 ingredient rule!! I'm sorry again! :)

Directions (from this site)
1. Preheat oven to 350. Line baking sheets with parchment paper.
2. Combine the peanut butter, white sugar and egg. Mix until smooth.
3. Drop spoonfuls of dough onto the prepared baking sheet. Bake at 350 for 6 to 8 minutes. Do not overbake! These cookies are best when they are still soft and just barely brown on the bottoms.
*Mine took closer to 11-13 minutes to bake.

 

One of my favorite things about these cookies are that they're actually better the next day (or after they cool completely). That never happens! Cookies are always the best fresh out of the oven, right?! I suppose I prefer the taste of peanut butter when it's not warm. :)

I filled y'all in on what I am passionate about last week. One of those things is creativity. I am passionate about creating.

This week I plan to intentionally carve out some time that passion of mine. I want to create space in our home in preparation for our move. I don't want the extra space to fill with more things; contrarily, by creating space I envision less clutter and more white space. I think there is a sort of peace in that. Time to de-clutter. Time to embrace living simply. Because after all...
